Bird Watching

Birding with Carla Jackett

A full day Birding in the Southern Highlands with Carla Jackett.

Carla has been birding for over 20 years in the Shoalhaven, Illawarra and Southern Highlands.

“The Southern Highlands is home to a variety of bird species ranging from the small Thornbills and Gerygones to the larger Gang-gang and Yellow-tailed Black Cockatoos. Some favourite birding locations in the Highlands and Shoalhaven regions include Barren Grounds Nature Reserve, Lake Wollumboola, Bomaderry Creek Regional Reserve and Jerrara Dam.  Each of these habitats attracts a great variety of species each year and at times a rarity might show up which draws birders (twitchers), from all parts of the Country.  It is easy to get hooked on birding and before you know it you will be out there searching for your next lifer!

I look forward to sharing my knowledge while we have fun birding together.  On our excursions we will visit a variety of habitats, learn about bird behaviour and how to identify birds using field guides. Over 250 bird species have been recorded in the Southern Highlands.”

Carla is a member of Birdlife Australia and the Illawarra Birders Club Inc.

Produced using traditional, organic, sustainable, and locally-based methods, artisan cooking techniques like fermentation allow food to develop slowly and naturally, with a fuller flavour.

During these 3-hour workshops, you will learn and apply artisan cooking techniques for bread making, or cheese, or pickled vegetables.

This class is suited to beginners as well as those with some experience. We will provide a cooler bag so you can take home your fresh artisan food.

Wine Tasting at Centennial Vineyards

Centennial Vineyards

We travel to Centennial Vineyards for a premium wine tasting.

“Over the years I have come to understand that good wines largely make themselves apart from very minor guidance and shaping. To this end, and where possible, I prefer to have a minimal impact on the winemaking process, and to let those inherent grape flavours speak of their vineyard origin.” Tony Cosgriff

Centennial Vineyards is all about cool climate grape growing and winemaking. The vines ripen with lower temperatures than most Australian wine regions. Because the climate is colder, vines ripen the fruit much more slowly and evenly than in warm regions, producing balanced, aromatic fruit.

Lunch at Centennial Vineyards

Centennial Vineyards

Offering breathtaking views across the vineyards, Centennial Vineyards Restaurant is an ideal setting to enjoy a relaxed lunch in the country with friends, great food and fine wine.

On balmy summer days, the restaurant’s glass doors open onto a spacious Australian verandah to provide a unique alfresco dining experience. In winter, the cosy and rustic appeal of the restaurant is enhanced by the enormous fireplace.

Centennial Vineyards Restaurant owners, Robin and Mandy Murray, have created a wonderful dining experience which makes the most of the beautifully appointed room and stunning vineyard views.
